About the Recipe
This isn’t just butter, it’s butter that’s been to therapy, travelled the world, and come back with stories. Roasted garlic brings the sweet, mellow depth; thyme adds a little herby swagger; and together they turn even the plainest slice of bread into a moment of pure luxury.
Slather it, melt it, spoon it into mash, this stuff is dangerously addictive. You’ve been warned.

Ingredients
1 whole bulb of garlic
1 tsp olive oil
150g unsalted butter (softened)
10g Maldon salt or similar
1 tsp fresh thyme leaves (or ½ tsp dried)
Preparation
Roast the garlic:
Preheat oven to 180°C (350°F).
Slice the top off the garlic bulb to expose the tops of the cloves.
Drizzle with olive oil, wrap in foil, and roast for 40–45 minutes until golden and soft.
Let it cool, then squeeze the cloves out like a tube of flavourful toothpaste.
Make the butter:
In a bowl, mash the roasted garlic with a fork until smooth.
Add the softened butter, thyme, and salt. Mix until fully combined and fluffy.
Serve or store:
Use immediately, or roll into a log in baking paper and chill.
Keeps in the fridge for up to a week, or freeze slices for up to 3 months.
